The Baker Boys - Rocky Road

One of my resolutions was to do more with the boys this year.

Beanie has been asking for a while if he could do some baking with me.

And at the beginning of the week I had said yes, but until today we had not gotten around to it.

So having asked him what he wanted to make, and expecting him to say cupcakes or a chocolate cake, his answer was Rocky Road!

Great, a simple recipe, that we all love.  We had sent moors-daddy out earlier in the week to buy the biscuits but everything else was ready and waiting in the cupboards.

We started by getting the step stool from the downstairs toilet, so that Beanie can reach the hob.

First we melted 125g of butter in a saucepan over a low heat.

Then we added 300g of cooking chocolate.

 (All the recipes say 70% cocoa but my boys prefer the cheap stuff!) and melt that down too, so it looks like chocolate goo.

Then I added 3 tablespoons of golden syrup, that Beanie mixed in.

Then the fun bit, put 200g of Rich Tea biscuits into a freezer bag and bash! And bash and bash.

You need both crumbs and chunky bits of biscuit. When happy you have got all your frustration and your child's out, add this mess to the mixture in the saucepan. Give it a stir until all the biscuit is covered in chocolate goo.

Then add about 100g of mini marshmallows, (we add a bit extra for added stickiness).

Mix these in until they start to melt and you can see them stretching in the pan.

Line a swiss roll pan (or similar) with greaseproof paper and empty the contents of the saucepan in.

Leave it to cool, and then chop it up into chunky bits, and devour in one sitting!

It really doesn't last long in our house and is a firm favourite with the men in the street when we have our Big Lunch street party in the summer months!
